Fyodor Dostoyevsky: Anything! (though I especially liked The Idiot)

Hermann Hesse: Steppenwolf and Demian are must-reads.

Jean-Paul Sartre: Nausea, "The Childhood of a Leader," and the Roads to Freedom trilogy (though the last book in the trilogy is disappointing)

Umberto Eco: Foucault's Pendulum

Nothing else to strongly recommend is coming to mind at the moment. Dostoyevsky has written so many incredible things that you can keep quite busy just reading his work.
